Leftovers can be boring. Unless you transform them into nachos! The barbecue process is quite long so I’ll have to create a new post for that from my husband. For this recipe, let’s just pretend you already have BBQ that you’re tired of eating on sliced bread with slaw.
1 cup leftover barbecue
store bought tortilla chips of your choice
1 cup cheddar cheese, shredded
1 jalapeno, sliced
sour cream and barbecue sauce for dipping
Preheat oven to 200 degrees.
Line cookie sheet with aluminum foil for easy cleanup.
Create 3 layers: chips, barbecue, cheese
Bake until cheese is bubbling, about 10 minutes.
